spicy sausage and greens pasta (dairy free!)
Ingredients
1 Yellow Onion
2tbs Olive Oil
4 Cloves of Garlic
1 Box of Your Favorite Pasta, I love Rotini or Rigatoni
.5lb Hot Italian Sausage
.5lb Sweet Italian Sausage
1 Can of Tomato Paste
1 Bottle of White Wine (Can be as cheap as you want)
1/2-1 tsp Calabrian Chilli Peppers in Oil (I use the Trader Joe’s one but you can put as much or as little as you prefer. This makes it spicy!)
1 Cup of Forager’s Cashew Probiotic Yogurt Drink
3 Spoonfuls of Forager’s Cashew Unsweetened Yogurt
1 Bunch of Broccoli
1 tsp Red Chilli Flakes
1 tbs Better Than Chicken Bouillon
S+P up to your discretion
Instructions
Place a pot of water on the stove and bring to a boil.
Remove the sausage from its’ casing. I prefer running a sharp knife lightly to create an incision down the sausage then peel off.
Place a pan on the stove at medium high heat + then place both types of sausage in the pan. Brown the sausage while breaking the sausage up into smaller bits. I like my sausage to be in very small pieces so it incorporates into the sauce more.
While the sausage is cooking, dice up the onion and finely chop the garlic and cut up the broccoli.
Add a pot of water to the stove, bring to a boil. Salt your water and add in the broccoli. Cook for about 10 minutes. The broccoli should be cooked through so it is soft.
At the same time, place the pasta into other pot of boiling water and cook based on the directions on the box. Reserve 1/4 cup of pasta water before straining.
Once sausage is browned, take it off the heat + place into a heat safe bowl and put aside.
In the same pan, put 1-2 tbs of olive oil and let heat up. Place your diced onion into the pan and let cook for 2 minutes. Add garlic and let cook for another 2 minutes. You want to start seeing the onion become less opaque. Add in the Calabrian chili oil.
Add 1/2 cup of the white wine to the onion mixture. Let the onions soak up the wine. Once the wine has condensed, add another 1/4 cup. Add tbs of Better than Chicken Bouillon, mix.
Add 1 can of tomato paste and mix. This is where I would add any S+P that you prefer (tomato paste is never salted so you will need to add a bit of Salt.)
Once the tomato paste is starting to stick to the bottom of the pan and crisp up, add another 1/4 cup of wine to deglaze the pan. Once that liquid has been soaked up, taste again for S+P additions.
Add your Cashew Yogurt and Probiotic Yogurt Drink. (This replaces a Heavy Cream). Mix.
Add crushed red peppers and taste.
Add the ground sausage back into the sauce and mix.
Put your pasta back into the large pot and add the cooked broccoli. Mix the pasta and broccoli together. Add the sausage and sauce mixture.
Mix everything together. Add more crushed red pepper and S +P based on your preference.
