Dad’s BBQ Chicken
Ingredients:
Container of Bone-in Chicken Thighs/Drumsticks/Breasts (amount of chicken will not affect the recipe)
3 sprigs of thyme
1 cup of brown sugar
1/4 cup of salt
water
1 container of bbq sauce (I use Sweet Baby Ray’s but this is up to your preference)
Instructions:
Brine the chicken by filling up a large container with water. The water should almost fill the container so the chicken will be covered once you drop in. Add thyme, brown sugar and salt. Stir. Add your raw chicken with skin on to the brine.
Brine up to 24 hours before cooking. If you are in a rush, 1-2 hours in the brine will suffice.
Preheat your oven to 425°
Prepare your cookie sheet with foil. Place a baking rack on top of the cookie sheet.
Heat up a large skillet or turn on your BBQ. Transfer your chicken, skin down on the skillet or BBQ to brown/char the skin. I eyeball this but try to aim for your skin to show a big of charring and browning before putting it on the baking rack.
Place chicken on the baking rack. Season your chicken with S+P.
Cook the chicken for 20-25 minutes. Flipping half way.
Once chicken is cooked, leave on baking rack and drench one side with BBQ sauce.
Place chicken back into the oven and put your oven settings on broil for 7 minutes. (I would watch this as the 7 minutes is based on my oven)
Take out the chicken and flip over. Drench the other side with BBQ sauce and place back into the oven to broil for 7 minutes.
Wait 5-10 minutes before serving. Serve with cornbread, mac n cheese, watermelon or whatever sides you want.
